80 is the max stat cap Greg, unless you, for example, get a higher cap through the Gamble Fruit.
Matrim's bio is terribly outdated, mainly because the player of Matrim, Joe, has not been on the board for years, and never will come back. So many of the characters you see with ridiculous stats, are people that have not been on 259 for a few years. The tier system was implemented fairly recently, and those with balls to the walls stats, like in the 100's to 200's, were re-transfered a couple years ago. In short, don't bother looking at the stats of people that have not logged in for a long while, because chances are, they won't come back, and even if they do, their bio would have to be broken by Leon.
As for David's bio, that was because before the max stat cap of 80 was implemented, David had a huge amount of EXP, and this was after Corey downgraded David maybe once or twice. He sold the extra EXP he had after the stat cap was implemented, and got a ton of money for it.

Thank you, everyone, for clearing this stuff up for me. The more research I did on this, the more questions I had, and it all makes a lot more sense now.

Also for the few of us who transferred around we had to adjust to certain rules. One system was you could not carry over your stats from forum to forum but you could take your items.
Any loss in stats was compensated by them being sold to the system and you could buy items. Hence why say Kazuya and I have items which would be nearly impossible to get on this forum legally.
Example I transferred #552 > #774 > #259
